Blue Moon® Harvest Pumpkin Ale Roasted Butternut Mash

Ingredients
- 1 butternut squash
- 3 tbsp. brown sugar
- 1 tsp. ground allspice
- 1 tsp. ground nutmeg
- 1 dash cayenne
- Salt
- 4 tbsp. butter, divided
- 4 whole clovesv
- 1 bottle Harvest Pumpkin Ale
- 1/4 cup cream
- Pepper
Directions
Preheat oven to 400º.
Slice butternut squash into halves, and de-seed with a spoon. Combine brown sugar, allspice, nutmeg, cayenne, and a pinch of salt in a bowl. Rub 1 tbsp. of butter onto each half of the squash. Rub dry ingredients generously onto each half, coating well. Stud the inside of each squash with 2 cloves. In a baking dish, add the entire bottle of beer and place squash flesh-side down.
Place in the oven for an hour or until squash is soft to touch. NOTE: Check squash at 40–45 minutes; if liquid surrounding squash is gone, add more beer.
Remove and let cool for 5 minutes. Remove squash from baking dish, saving the liquid. Scoop out the squash meat and place into a pot. Add cream and remaining butter and mash/mix well. If still dry, add a bit of the cooking liquid to meet preferred consistency. Salt and pepper to taste.
