Pearl Couscous with Roasted Corn
Serves: Makes 6-8 servings

Ingredients
- 2-1/2 cups water
- Salt
- 2 cups pearl couscous
- 3 ears of corn, roasted and cut off the cob
- 1 red bell pepper, diced
- 4 green onions, diced
- 1/2 cup crumbled feta cheese
- Olive oil
Directions
Place the water in a deep pot. Heavily salt the water and bring it to a boil. Once boiling, add couscous and reduce heat to a simmer. Cover and let cook for 8–10 minutes, until couscous is al dente. Once cooked, remove from heat, uncover, and fluff with a fork. Then add the roasted corn, red pepper, and green onions and combine well. Crumble in the feta cheese and lightly mix.
Assembly
Top with olive oil.
